- For the nectarine dip
- 1 tsp sesame oil
- 1 shallot (finely chopped)
- 1 garlic clove (finely chopped)
- 3 Nectarine (peeled and finely chopped)
- 1 red pepper (halved, seeds and interior white skin removed, finely chopped)
- 1 pinch ground ginger
- cayenne pepper
- 1 Tbsp apple cider vinegar
- 2 Tbsps fresh Basil (chopped)
- For the kebabs
- 1 chili pepper (roughly chopped)
- 1 shallot (finely chopped)
- 2 garlic cloves (sliced)
- ¼ tsp ground Cumin
- ¼ tsp ground cilantro
- 2 Tbsps light soy sauce
- 4 Tbsps Coconut milk
- 1 Tbsp sesame oil
- 4 Chicken breasts (cut into thin strips)

Heat the oil in a skillet and fry the shallot and garlic until transparent. Add the nectaries and pepper and fry for approx. 2-3 minutes. Season with ginger, salt, cayenne pepper and vinegar.

Remove from the heat and allow to steep for approx. 30 minutes.

Mix the chilli, shallot, garlic, cumin, coriander, soy sauce, coconut milk and the sesame oil. Add the chicken strips and marinate for at least 2 hours.

Remove, season with salt and ground black pepper and skewer onto kebab sticks in a wave-like motion.
5.
Grill for approx. 8 minutes, brushing with the marinade and turning occasionally.
6.
Just before serving add the basil to the nectarine dip and season well.
