Chicken breasts (skinned)

red chile peppers (deseeded and finely chopped)

fresh Ginger root (peeled and finely chopped)
4 tablespoons
1 teaspoon
lemon juice (from 1 lemon)
For the raita
1 cup

Cucumber (seeds removed and finely sliced)

mint (leaves finely chopped)
1 teaspoon
½
green chile pepper (deseeded and finely chopped)
To serve

tomatoes (chopped)

Preparation steps

1.
Cut the chicken breasts into wide strips and set aside.
2.
Mix the remaining ingredients together to make a paste and rub into the chicken slices. Cover and refrigerate for 8 hours.
3.
For the raita, mix together all the ingredients and set aside.
4.
Heat the broiler or barbecue to a medium setting. Thread the chicken slices onto wooden skewers and broil for about 3 minutes on each side or until the chicken is cooked through.
5.
Serve with the raita, chopped tomatoes and flat breads alongside.
