- Ingredients
- 4 Chicken fillet (ca. 160 g each)
- 2 garlic cloves
- 1 freshly ground pepper
- 1 chopped shallot
- ¼ tsp ground Caraway
- ¼ tsp ground cilantro
- 2 Tbsps light soy sauce
- 4 Tbsps Coconut milk
- 2 Tbsps Oil
- salt
- freshly ground peppers
- For the peanut sauce
- 1 ½ cups shelled, unsalted Peanuts
- ⅞ cup Coconut milk
- 2 Tbsps Peanut butter
- 1 tsp Curry
- 1 lemon
- 1 pinch sugar
- 3 Tbsps cream
Preparation steps
1.
Slice the fillets into thin, 2 cm wide, strips.
2.
Mix the rest of the ingredients together to make a marinade.
3.
Put the chicken in the marinade. Allow to sit for several hours. Remove the chicken from the marinade and shake off any excess.
4.
Thread the chicken strips on 8 skewers so they make a wavy shape.
5.
Grill for approximately 10 minutes basting occasionally with the marinade.
6.
Toast the peanuts in a saucepan (without oil). Allow to cool. Crush finely in a mortar.
7.
Put the coconut milk, peanut butter and curry in a pan and bring to a boil.
8.
Remove some of the zest from the lemon and squeeze out the juice. Mix the lemon zest and juice into the sauce. Season to taste with the sugar.
9.
Add enough cream to make the sauce... creamy!
