1 Soak wooden skewers in lukewarm water (to prevent burning).
2 Rinse chile pepper, cut in half lengthwise, remove seeds and chop finely.
3 Mix chile pepper in a small bowl with oil and salt to taste.
4 Take skewers out of the water. Rinse the mushrooms and trim.
5 Rinse the chicken breast, pat dry with paper towels and cut into pieces. Alternately thread chicken pieces and mushrooms on skewers.
6 Heat a non-stick pan. Sprinkle chile oil in the pan and fry the skewers until golden brown on all sides over medium heat.
7 Rinse cilantro, shake dry and pluck leaves from stems. Sprinkle cilantro leaves over the skewers and serve.
