Chicken and Mushroom Skewers
with Chile Pepper Oil

Soak wooden skewers in lukewarm water (to prevent burning).
Rinse chile pepper, cut in half lengthwise, remove seeds and chop finely.
Mix chile pepper in a small bowl with oil and salt to taste.
Take skewers out of the water. Rinse the mushrooms and trim.
Rinse the chicken breast, pat dry with paper towels and cut into pieces. Alternately thread chicken pieces and mushrooms on skewers.
Heat a non-stick pan. Sprinkle chile oil in the pan and fry the skewers until golden brown on all sides over medium heat.
Rinse cilantro, shake dry and pluck leaves from stems. Sprinkle cilantro leaves over the skewers and serve.
