- 400 grams black Pasta
- salt
- 3 Tbsps olive oil
- 450 grams Salmon (without skin)
- 3 shallots
- 300 grams green Thai asparagus
- 2 Tbsps butter
- 1 sm can Saffron (0.1 gram)
- 1 tsp White vinegar
- 150 milliliters dry white wine
- 150 milliliters fish stock
- freshly ground peppers

Preparation steps
1.
Cook black pasta in plenty of boiling salted water until al dente. Drain and mix with olive oil.

Rinse salmon, pat dry with kitchen paper and dice. Peel shallots and finely dice. Rinse asparagus and halve crosswise.

Melt butter in a large frying pan. Briefly saute shallots and saffron, stirring until translucent and soft. Deglaze with vinegar, white wine and fish stock, add asparagus and let liquid boil for about 4 minutes. Add salmon with salt and pepper and cook for 1-2 minutes, swirling around pan. Mix pasta with pan contents, briefly heat and serve in deep plates.
