300 grams Corn (canned)
1 Tomato
¼ Red Bell pepper
150 grams Bacon
2 scallions
1 Tbsp butter
100 milliliters Vegetable broth
salt

Preparation steps

1.

Rinse beans and corn through a sieve and drain well. Blanch tomato, dip in ice water, skin, quarter, core and cut into small cubes. Rinse bell pepper, clean and also cut into small cubes.

Cut the bacon into 1cm (approximately 1/2-inch) wide strips. Rinse scallions, shake dry and cut into thin rings.

In a pan, melt butter and saute bacon and scallions. Stir in lima beans, corn, bell peppers and tomato and saute. Add vegetable broth, close lid and simmer about 10 minutes over medium heat. Serve seasoned with salt, pepper and a pinch of sugar.
