You can substitute the ham for turkey if you don't eat pork or want a leaner variation.

Preheat the oven to 350F.

Wash and trim the zucchini and blanch whole in boiling salted water for about 3 minutes. Take out of the pan, refresh in cold water, and drain thoroughly. Then slice thinly lengthwise.
Slice the mozzarella. Season the zucchini slices with salt and pepper. Then top with ham, a few slices of mozzarella and basil leaves and roll-up.

Place the zucchini rolls in a greased baking dish and drizzle with a little olive oil.

Wash the tomatoes and scatter among the rolls.

Put into a preheated oven and bake for about 20 minutes. Then lay the remaining mozzarella slices over the rolls, and put back into the oven until the cheese begins to melt.
