1 oz finely crumbled breadcrumbs
2 ozs chopped Fresh herbs (parsley, tarragon, chervil)
2 cloves garlic cloves (finely chopped)
3 Tbsps olive oil
peppers
lemons (juice)

Preparation steps

1.

Rinse and open oysters (hold oysters with arched side down in a kitchen towel, pierce with an oyster knife behind hinge, rotate and open. Then cut upper muscle attachment of shell, remove top shell and then cut lower muscle attachment). Reserve oyster water.

Pour oyster water through a fine sieve and set aside.

Clean oyster shells.

Mix olive oil, oyster water and lemon juice together and season with pepper.

5.

Place oysters again in shells, top with chopped herbs and garlic, sprinkle with breadcrumbs and drizzle with sauce.

6.

Grab a thick baking sheet, sprinkle with sea salt and place oysters on sheet.

7.

Bake in a preheated oven at 230°C / 450°F for about 5 minutes. Serve.
