Preparation steps

Rinse the chicken, pat dry and season with pepper. Rinse basil, shake dry and pluck off the leaves. Top the breast halves with 2/3 of the basil leaves and wrap with bacon. Preheat the oven to 180°C (approximately 350°F) convection. Heat the oil in a pan. Sear the wrapped chicken breast halves on both sides over medium heat, 2-4 minutes. Place in an oven-proof dish or roasting pan. Bake in the oven on the middle rack 25 to 30 minutes.

Meanwhile, peel and chop the onion. Rinse chile pepper, remove seeds and chop. Peel mango and cut the flesh off of the pit into small pieces. Fry onion in the bacon drippings until translucent, about 2 minutes. Add chile pepper and mango and sauté 2 minutes. Deglaze with the chicken broth and bring to a boil briefly. Puree mango mixture in kitchen blender. Mix in the orange juice, put mango sauce back into the pan and bring to a simmer. Stir in some broth or orange juice if the sauce is too thick. Season the mango sauce with salt, pepper and lemon juice. Take chicken breasts from the oven, cut into slices and arrange with the mango sauce on plates. Garnish with remaining basil leaves and serve.
