200 grams butter
100 grams sugar
2 Tbsps grated Lemon peel
4 eggs
250 grams Pastry flour
2 tsps Baking powder
75 grams ground almonds
125 milliliters milk
125 grams grated Apple

400 grams Whipped cream
2 packets Vanilla sugar
1 tsp cinnamon

Preparation steps

Mix butter, sugar, lemon zest and eggs until creamy. Stir in flour, baking powder and almonds, slowly add the milk and form into the batter.  Then fold the egg mixture into the batter. The dough should be thick. Heat the waffle iron, grease with a little oil and bake waffles until golden. Keep the waffles warm in the oven at 70°C (approximately 150°F).

For the cinnamon cream, whisk the cream with vanilla sugar and cinnamon until stiff and serve with the warm waffles.
