- salt
- 120 grams butter
- 120 grams sugar
- ½ tsp Lemon peel
- ½ Vanilla bean (split)
- 250 milliliters Buttermilk
- 200 grams Pastry flour
- 60 grams ground Pecan
- 1 ½ tsps Baking powder
- 1 tart Apple (such as Granny Smith)
- 1 Tbsp lemon juice
- powdered sugar (for dusting)
Preparation steps
Separate the eggs and beat the egg whites with a pinch of salt until stiff. Halve vanilla bean lengthwise and scrape out seeds with a sharp knife. Beat the butter, sugar, lemon zest and vanilla seeds until creamy and then gradually stir in the egg yolks and milk. Combine the flour, ground pecans and baking powder and add to the batter and then carefully fold in the egg whites.
Peel and quarter the apple and remove the core. Grate the apple finely and mix with the lemon juice, then stir into the batter. Pour 2-3 tablespoons of the batter into a preheated, buttered waffle iron. Close the waffle iron and bake until golden. Remove the finished waffle and repeat the process with the rest of the batter.
To serve, dust the waffles with powdered sugar. Pairs perfectly with a delicious cappuccino.
