- For the salad
- 2 medium Avocados (peeled, stoned and diced)
- 4 ½ ounces cooked Beets (diced)
- ¼ cup Walnut (roughly chopped)
- 1 large Mango (stoned and diced)
- ½ Red onion (finely chopped)
Combine the salad ingredients in a large mixing bowl.
Toss together to combine, then dress with the olive oil, lime juice and red chilli flakes.
Season with salt and pepper, stir in the coriander and spoon the salad into serving glasses. Serve cold.
