Turkey Curry with Vegetables and Rice
Cook rice according to package directions.
Rinse the meat, pat dry and cut into bite-sized strips. Rinse and trim the leek and cut the white and light green part into rings. Rinse the peppers, cut in half, remove the seeds and ribs and cut into strips. Sauté the vegetables in butter while stirring for about 5 minutes, season with salt and pepper, then remove from the pan. Season the turkey with salt and pepper and fry in hot oil for about 3-4 minutes, then sprinkle with curry powder.
Add the vegetables to the meat, pour in the coconut milk and broth and simmer everything for about 4 minutes. Serve with rice.
