700 grams turkey breasts (with skin)
salt

½ tsp Curry
1 Tbsp clarified butter
100 milliliters Vegetable broth
For the mashed sweet potatoes
750 grams Sweet potato
salt
vegetable oil (for frying)

150 milliliters milk
Vegetable broth (as needed)

Preparation steps

Preheat  oven to 200°C (approximately 400°F). Rinse turkey breast and pat dry. Mix salt, pepper and curry powder and rub over meat. Brown meat on all sides in clarified butter. Place meat and broth in a baking dish and bake 40 minutes, basting occasionally with pan juices.

Peel sweet potatoes and cut into pieces. Set aside two to three pieces for garnish. Boil remaining potato pieces in salted water until tender, about 30 minutes, and drain. Heat milk and butter until butter is melted. Press sweet potatoes through a potato ricer into milk. Mix to a creamy consistency, adding broth if necessary. Season with salt and nutmeg. For garnish, thinly slice the uncooked potato pieces, fry in hot oil until golden brown and drain on paper towels.

To serve, cut meat into strips. Sprinkle fried sweet potato chips over mashed sweet potatoes and season with cayenne pepper.
