750 grams turkey breasts (in 4 slices)
1 Kale
4 Tbsps butter
100 milliliters Vegetable broth
2 Tbsps parsley (chopped)
salt
freshly ground peppers
2 Tbsps vegetable oil
Nutmeg (ground)
2 Tbsps Crème fraiche
600 grams starchy potatoes
150 milliliters milk

Preparation steps

1.

Rinse the potatoes and boil in salted water for about 30 minutes until tender.

Rinse the kale and blanch in salted water for about 5 minutes. Drain, shock with cold water, and drain again. Coarsely chop and sauté in pan with 2 tablespoons butter. Deglaze the pan with broth and simmer over low heat, stirring occasionally. Season with salt and nutmeg.

Season the turkey with salt and pepper and sauté in hot oil on each side for 2–3 minutes. Mix in the parsley and remove from heat.

4.

Drain the potatoes. Peel them and press through a potato ricer. Mix with hot milk and remaining butter until smooth. Season with salt and nutmeg.

5.

Serve the turkey immediately with a dollop of crème fraîche alongside the kale and potato puree.
