- 28 ozs Sweet potato
- 6 ozs Whipped cream
- 2 Tbsps butter
- ½ lemon (zest and juice)
- salt
- freshly ground pepper

Preparation steps
1.
Thoroughly scrub the sweet potatoes and wrap them in aluminum foil. Bake in a 400°F oven for 50 minutes.
2.
Remove the sweet potatoes from the foil, cut in half and scrape the flesh into a bowl. Add the butter and cream to the bowl. Season with lemon juice, salt and pepper to taste. Mash with a potato masher to desired consistency. Serve garnished with lemon zest.
