Tomato Soup with African Relish (Chakalaka)
Ingredients
- For the relish
- 2 ½ centimeters fresh ginger
- 1 garlic clove
- 1 onion
- olive oil
- 1 red, chopped chili pepper
- 2 Tbsps Curry powder
- 400 grams baked Beans (in tomato sauce, tin)
- For the soup
- 1 shallot
- 500 grams Tomatoes
- 1 Red chili pepper
- 1 green chili pepper
- 300 milliliters pureed Tomatoes
- 400 milliliters Chicken broth
- 2 tsps Chinese 5 spice powder
- salt
- cayenne pepper
Preparation steps
For the relish: Peel and finely chop the ginger, garlic and onion. Heat 100 ml (approximately 3 ounces) of oil in a pan and fry the ginger, garlic, onion, chile pepper and ground cumin. Peel and grate the carrots. Rinse and chop the tomatoes. Put the carrots, tomatoes and beans into a pot. Simmer about 5 minutes over medium heat. Stir in the pepper mixture.
For the soup: Finely chop the shallot. Rinse the tomatoes, remove the stalks and cut into small pieces.
Rinse and chop the peppers.
In a saucepan, heat 2 tablespoons of oil and sauté the shallot with the peppers. Add the tomato puree and chopped tomatoes. Pour in the chicken broth, stir in the spices and simmer for 15 minutes over medium heat. Season with salt and cayenne. Serve dressed with the chakalaka relish.
