For the Relish
1 kilogram ripe Tomatoes
2 onions
2 garlic cloves
1 chili pepper
4 Tbsps olive oil
2 tsps Tomato paste
50 milliliters Red wine
1 Tbsp minced Basil
2 Tbsps balsamic vinegar
salt
sugar
4 Jam jars (with screw-on lids)

Preparation steps

1.

Bring the water for blanching the tomatoes to a boil.

2.

Rinse the jars in hot water, then drain on a kitchen towel.

Rinse the tomatoes and cut crosswise. Blanch in the boiling water, then remove. Peel, quarter, remove the cores, and dice.

Peel and finely chop the onions and garlic. Rinse the chili and finely chop also.

Heat the oil in a large saucepan and sauté the chili with the onions and garlic. Stir in the tomato paste, and then deglaze with the red wine. Add the diced tomatoes and simmer for 10 minutes, stirring constantly. Add the basil and balsamic vinegar, then season to taste with salt and sugar.

Remove the lids from the jars. Fill the jars with the relish using a ladle. Clean the lips of the jars, and seal tightly. Turn upside down for 5 minutes, then turn right side up and cool completely.
