53 ozs cured pork loin (fat scored in a criss-cross pattern)
4 Tbsps honey
4 Tbsps lemon juice
1 red chili pepper (finely chopped)
½ tsp ground ginger
ground allspice
cinnamon
ground cilantro
cayenne pepper
2 Tbsps vegetable oil
cup Meat stock

Preparation steps

1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.
2.
Mix together the honey, lemon juice, chilli, ginger and a pinch of each of the spices to make a marinade.
3.
Heat the oil in a roasting tin and fry the meat on all side on a high heat. Add the stock and brush the meat with some of the marinade. Place the tin in the oven and roast for around 90 min brushing every so often with the marinade.
4.
Remove from the oven, rest for a few minutes and then serve in slices.
