Rolled Pork Joint with Stuffing

If desired, add four whole apple to the roasting tin for the final 30 minutes of cooking time.
Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4.
Fry the shallot and the mushrooms in the butter. Add the apple and fry for 2-3 minutes. Stir in the bread and the lemon zest and season with salt, ground black pepper and nutmeg.
Spread out the meat and season with salt and ground black pepper. Place the stuffing in a line on top of the meat and roll up. Fasten with kitchen twine and fry in hot oil in a roasting tin on all sides. Deglaze with the stock and add the bay leaf. Braised in the oven for around 1 hour, basting every so often. Serve sliced.
