Preparation steps

1.

Peel sweet potatoes and cut lengthwise into slices about 1/2 inch thick. Drizzle with olive oil. Season with salt and pepper and bake in a preheated oven at 180 °C / 350 °F for 10-15 minutes.

Meanwhile, put a pot of water and cook the eggs in boiling water for 10 minutes. Halve the avocado, remove the stone, lift the flesh from the skin and cut the avocado lengthwise into thin slices.

3.

Remove sweet potatoes from oven and let cool slightly. Then spread with cream cheese.

4.

Spread avocado on top and grate the cooked egg over it with a grater. Avocado toasts with egg salt, pepper and serve.
