1 tsp Cardamom
4 Tbsps raisins
2 tsps vegetable oil
4 Tbsps Coconut milk
500 milliliters low fat milk
honey (to taste)
1 pinch Iodized salt

Preparation steps

Rinse rice in colander and drain. Cut apricots into small pieces. Combine rice, apricots, cinnamon, 3 cardamom pods and raisins. Heat oil. Saute rice mixture for 5 minutes. Add coconut milk, regular milk, 2 tablespoons of honey, 1 pinch of salt and about 250 ml (approximately 1 cup) of water, stir well.

Cook for about 15-25 minutes, stirring occasionally. Add water if necessary. Season coconut rice to taste. Garnish with mint and serve.
