Sweet and Spicy Winter Squash and Filo Pie
- 400 grams Filo dough
- 500 grams Pumpkin (peeled and seeded)
- 1 garlic clove
- 200 grams sheep cheese
- Sea salt

Grease a 26 cm (approximately 10 inch) springform pan.
Peel and finely chop the garlic.
Dice the squash flesh. Sauté with the garlic in 2 tablespoons hot oil, until softened. Remove from the heat and let cool.
Crumble the feta, mix into the squash and season with salt, paprika and cayenne.
Brush each sheet of filo with a little oil and form stacks of 2. Distribute the squash filling between the sheets and roll up. Arrange in the prepared pan, brush with egg yolk and bake in a preheated oven at 200°C (approximately 400°F) convection for about 35 minutes, until golden brown. Serve cut into pieces.
