Stir-Fried Asian Noodles and Vegetables
Peel and finely chop the ginger and shallots. Rinse, peel and cut the carrots into thin sticks. Prepare the noodles according to package directions and drain well. Heat the oil in a skillet and sauté the carrots with the shallots and ginger until crisp-tender. Season with salt and pepper. Add the noodles and cook, tossing, for another 2 minutes. Season with soy sauce.
Serve garnished with cilantro.
