- 1 Tbsp vegetable oil
- salt
- peppers
- 1 onion (peeled and chopped)
- 3 cloves garlic cloves (crushed)
- 2 Tbsps Curry powder
- 6 sprigs thyme
- 1 tsp ground allspice
- ½ tsp ground cinnamon
- 2 bay leaves
- 1 green chili pepper (depending on how hot you want it)
- 8 scallions (ends trimmed)
- 2 cups chicken stock
- 2 cups canned Tomatoes
- 4 Chicken thigh

Preparation steps
1.
Heat the oil in a large pan and cook the onion and garlic with the spices until softened.
2.
Add the chillies and spring onions, chicken stock and tomatoes and simmer for 30 minutes or until thick and reduced.
3.
Leave to cool, then coat the chicken thoroughly in the marinade and leave for 4 hours or overnight.

Preheat the oven to 190°C (170° fan) | 375F | gas 5
5.
Sit the chicken in a roasting tin and cook in the oven for 25-30 minutes until cooked through.
6.
Meanwhile simmer any excess marinade to serve alongside. Serve the chicken with the sauce.

This would work well with pork chops or even pork belly, but try lamb as well for a change.
