600 grams Squid ring
2 eggs
200 grams Pastry flour
¼ l dry white wine
2 Tbsps olive oil
salt
Pastry flour (for dusting)
vegetable oil (for frying)

Preparation steps

Rinse the squid rings and pat dry.

Separate the eggs. Mix the flour with the white wine, olive oil, 1 pinch of salt and stir in the yolks. Let it rest for about 10 minutes. Beat the egg whites until stiff and fold into the yolk mixture to form a smooth batter.

Dust the squid rings with the flour, dip into the batter and drain the excess batter. Heat oil in a pan and fry the batter-coated squid rings in it in portions until golden brown for 2-3 minutes. Drain the fried squid rings on kitchen paper and serve as desired with orange dip.
