- ⅜ cup Wine vinegar
- 2 cloves
- 1 tsp peppercorns
- 6 cups prepared Squid
- 2 onions (diced)
- 2 garlic cloves (diced)
- 2 carrots (diced)
- 3 Tbsps olive oil
- 1 Tbsp flour
- 1 ⅓ cups Red wine
- 2 bay leaves
- 5 Tomatoes (roughly diced)
- 1 tsp fresh thyme (chopped)

Preparation steps
1.
Mix the vinegar, cloves and peppercorns in 1.5 litres/2 3/4 pints water and bring to a boil.
2.
Add the squid - it should be covered by the liquid - and cook for approx. 90 minutes until soft.
3.
Remove the squid from the broth and let cool. Then cut into pieces.
4.
Fry the onions, garlic and carrots in hot oil for around 5 minutes. Add the squid and after a few minutes dust with flour and quench with red wine.
5.
Add the bay leaves and tomatoes and stew half covered for approx. 1 hour stirring occasionally. If necessary add a little more water.
6.
In the last ten minutes add the thyme and season with salt and ground black pepper.
