Ingredients

For the dough:
500 grams Pastry flour
½ cube Yeast (21 grams)
250 milliliters lukewarm milk
100 grams butter
½ tsp salt
For the filling:
125 grams Gruyere (finely diced)
½ Red Bell pepper
Additional:
2 egg yolks

Preparation steps

1.

Stir the yeast and a little warm milk until smooth.

Mix the flour, the butter flakes and salt in a mixing bowl. Mix in the yeast milk and the remaining milk. Knead everything with the dough hook of a hand mixer to form a smooth dough. Cover and let rise in a warm place (40°C (approximately 100°F) oven) for about 1 hour.

Rinse the peppers, remove seeds and chop into small cubes.

Knead the dough again, roll it out, cut into triangles about 12 cm long (approximately 4 3/4 inches). Sprinkle with the cheese and peppers. Roll up and form into croissants. Brush with beaten egg yolk and place on a buttered baking sheet. Bake in a preheated oven (200°C (approximately 400°F) about 25 minutes until golden.
