olive oil (extra virgin)
1 garlic clove (finely chopped)
2 chili peppers (green and red, cut into rings)
1.333 cups black Olives (pitted, cut into rings)
Parmesan (or Pecorino cheese)

Preparation steps

1.
Cook the taglierini in plenty of salted boiling water and drain. Set aside a cup of the water.
2.
Gently heat 4 tbsp oil in a pan and fry the garlic - do not let it turn brown otherwise it will taste bitter. Add the chillies and the olives. Then stir in the pasta and mix everything together well.
3.
Remove the pan from the heat, season with salt and ground black pepper and stir in 2-3 tbsp of the reserved cooking water. Arrange on plates and serve immediately garnished with grated Parmesan or Pecorino.
