18 ozs Taglierini
1 Tbsp butter
1 small Red onion (finely chopped)
cup cream
2 Tbsps Parmesan (grated)
Nutmeg (freshly grated)
8 cups chopped Spinach (cut into fine strips)
1 chili pepper (cut into rings)

Preparation steps

1.
Cook the taglierini in plenty of boiling salted water until al dente.
2.
Melt the butter in a pot and fry the onion. Add the cream, bring to the boil and then simmer on a medium heat stirring continuously. Stir in the Parmesan, season with salt, ground black pepper and nutmeg and set aside.
3.
Drain the pasta and set aside a cup of the water. Add the sauce to the pasta and stir in 2-3 tbsp of the reserved cooking water.
4.
Add the spinach and the chilli and mix in quickly. Season once again with salt and ground black pepper, arrange on plate and serve immediately. If desired sprinkle with grated Parmesan.
