- 2 Tbsps sunflower oil
- 1 clove garlic cloves (minced)
- 1 onion (finely chopped)
- 1 large, white potato (peeled and diced)
- 2 cups vegetable stock
- 2 cups baby Spinach (washed)
- 2 cups Arugula (washed)
- ⅞ cup Whole milk
- ½ cup Roquefort (cubed)
- salt
- freshly ground peppers

Preparation steps
1.
Divide the oil, garlic, and onion between four large microwaveable mugs. Cook on high for 2 minutes.
2.
Remove from the microwave and add the potato, stock, and a little seasoning to each mug. Return to the microwave and cook on high for 6 - 8 minutes, stirring after 3, until the potato is tender.
3.
Carefully remove the mugs from the microwave and divide the spinach and most of the rocket between each mug, stirring well.
4.
Add the milk to each mug and blend with an immersion blender until smooth. Reheat the soups in the microwave for 1 minute.
5.
Season to taste with salt and pepper. Serve with a garnish of Roquefort and the remaining rocket leaves on top.
