2 large, red Bell pepper (rinsed; seeded and quartered)
1 large, orange Bell pepper (rinsed; seeded and quartered)
3 cups Mangoes (peeled and cut into chunks; plus extra to garnish)
1 cup Orange juice
½ cup Vegetable broth
2 Tbsps fresh Lime juice
1 Tbsp freshly grated ginger (grated)
1 tsp hot sauce
2 Tbsps white wine vinegar
1 pinch salt
fresh Orange peel (grated; to garnish)
fresh Basil (to garnish)

Preparation steps

1.
Preheat oven to broil. Line a baking sheet with aluminum foil.

Arrange peppers on the prepared baking sheet and broil for about 10 minutes or until blistered. Place peppers in a large bowl; cover with plastic wrap and let stand 10 minutes. When the peppers are cool to the touch, peel and roughly chop.

In the bowl of a food processor, combine peppers and mangoes; pulse until smooth. Add orange juice, vegetable broth, lime juice, ginger, hot sauce, vinegar and salt; pulse until smooth. Pour into a nonreactive bowl, cover and chill for at least 3 hours.
4.
Serve topped with orange peel, chopped mangoes and basil leaves.
