- 3 Tbsps Oil
- 2 onions (finely chopped)
- 2 cloves garlic cloves (chopped)
- fresh ginger (peeled and grated)
- 1 tsp Chili powder
- 1 tsp Turmeric
- 1 tsp ground cilantro
- 1 tsp Garam Masala
- 2 carrots (peeled and diced)
- 4 Tomatoes (skinned and chopped)
- 3 cups chicken stock
- 2 large Chicken breasts (skinned and cut into chunks)
- ½ cup Coconut milk
- 1 Tbsp lemon juice
- 2 Tbsps slivered almonds (toasted)
- 2 Tbsps chopped cilantro

Preparation steps
1.
Heat the oil in a large pan and gently cook the onions until soft but not brown.

Add the garlic, ginger, chilli powder, turmeric, ground coriander and garam masala. Cook for 2 minutes, stirring all the time, then add the carrots and tomatoes.
3.
Pour over the stock, bring to a boil and simmer for 10 minutes. Add the chicken, simmer for 10 minutes then add the coconut milk and simmer for 5 more minutes.
4.
Stir in the lemon juice, season with salt and pepper and serve garnished with the almonds and coriander leaves.
