2 tablespoons olive oil
1 onion (chopped)
1 clove garlic (chopped)
2 teaspoons sweet paprika
1 red chile pepper (deseeded and chopped)
1 red Bell pepper (deseeded and chopped)
2 cups canned tomatoes (chopped)
4 tablespoons tomato puree
3 cups vegetable stock
½ teaspoon sugar
4 tablespoons Crème fraiche
8 cooked Prawn (skewered onto cocktail sticks)
1 generous pinch Chili flakes
spinach Pesto (to serve, optional)

1 Bowl, 1 Small bowl, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Sieve, 1 Grilling tongs, 1 Brush, 1 Grill

Preparation steps

Heat the olive oil and gently cook the onion until soft but nor brown. Add the garlic, cook for 1 more minute then add the paprika and chilli.

Stir for 1 minute then add the bell pepper, tomatoes, tomato puree, stock and sugar. Bring to a boil and simmer very gently for 30 minutes.
3.
Season with salt and pepper, blend to a smooth puree then pass through a fine sieve into a clean pan.
4.
Reheat gently then pour into warmed bowls and serve garnished with the creme fraiche, prawns and chilli flakes.
