3 tsps apple cider vinegar
1 generous pinch Lemon peel (grated)

Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Rinse and pat dry the meat and cut into individual ribs. Brush the ribs with oil, place on a lined baking tray and cook in the preheated oven for 20 minutes.

Meanwhile, peel and finely dice the onions. Peal and chop the ginger. Bring the maple syrup, 4 tablespoons of water, vinegar and onions to a boil for 1 minute. Remove from heat and stir in the lemon zest and the ginger. Season with salt. Add the marinade to the ribs and grill for about 10 minutes. Serve immediately.
