Preparation steps

Season the pork ribs with salt and pepper and place in a roasting pan. Pour in 1 cup of hot water and place cook a preheated oven at 220°C (approximately 425°F). After about 30 minutes, turn the heat down to 160°C (approximately 325°F) and cook for about 30 minutes longer, covered. From time to time, add some hot water and occasionally baste with the juices.

Arrange the pork ribs on plates. Sprinkle with rings of blanched green onions and serve with sliced chile pepper flowers.

(For the chile pepper flowers, cut lengthwise so that the peppers hold together at the stem end, then soak in cold water for 30 minutes.)
