- 71 ozs lean Pork spare rib rack
- 3 cloves garlic cloves (minced)
- ½ cup good quality olive oil
- salt (to taste)
- freshly ground Black pepper (to taste)
- 4 sprigs fresh rosemary (plus extra for garnish)

Preparation steps
1.
Separate the ribs into individual servings (3 to 4 ribs per serving). Rinse the ribs under cold running water and pat dry with paper towels.
2.
In a small bowl, mix the garlic, olive oil, salt and pepper. Pour the marinade over the ribs, coating the ribs completely. Lay the rosemary sprigs on the meat. Marinate for a least 2 hours, or over night for best results.
3.
Grill the ribs slowly for about 25 minutes, turning and brushing them frequently with the marinade. Garnish with rosemary and serve.
