- 35 ozs very ripe Tomatoes (roughly chopped)
- 4 scallions (roughly chopped)
- 3 cloves garlic cloves
- ½ Cucumber (peeled and roughly chopped)
- 1 red Bell pepper (roughly chopped)
- 0.333 cup extra virgin olive oil
- 2 Tbsps Sherry vinegar
- salt

- To garnish
- 2 Tomatoes (diced)
- ½ Cucumber (peeled and diced)
- ½ red pepper (seeds removed and diced)
- ½ Red onion (diced)
- To serve
- crusty Bread

1 Cutting board, 1 Large knife, 1 Mandoline, 1 Sieve, 1 Small knife, 1 Tablespoon, 2 Non-stick pans, 1 Wooden spoon, 1 Slotted spatula
Preparation steps

Put all the vegetables in a blender or food processor and blend until smooth. If you want a smoother soup, put the gazpacho through a sieve, once or twice.

Return to the blender and blend, while slowly adding the olive oil and sherry vinegar. Season well with salt and pepper. If the soup is too thick, add a little water. Chill until ready to serve.
3.
Garnish with the diced vegetables and serve with crusty bread.
