- 18 ozs ripe Tomatoes
- boiling water
- 1 slice Bread
- ½ Cucumber (peeled and cut into small dice)
- 1 red Bell pepper (seeds removed, cut into small dice)
- 2 onions (chopped)
- 1 Tbsp white wine vinegar
- 2 cloves garlic cloves (crushed)
- 1 tsp sugar
- 1 tsp paprika
- 2 Tbsps olive oil
- salt

Preparation steps
1.
Put the tomatoes into a heatproof bowl and cover with boiling water. Stand for 1 minute then drain off the water and and set aside for a few minutes until cool enough to handle, then peel off the skins.

Soak the bread in a little water, then squeeze dry.
3.
Set aside 2 tablespoons cucumber and 2 tablespoons red pepper for the garnish.
4.
Put all the ingredients except the oil, salt and pepper into a blender or food processor and blend until smooth.
5.
Pour into a large non-metallic bowl. Stir in the oil and vinegar. Add salt and pepper to taste. Mix well, cover and chill for 1 hour.
6.
Serve in bowls sprinkled with the reserved diced cucumber and red pepper.
