16 cups Tomatoes
4 egg whites
3 sprigs Chervil
salt

Preparation steps

1.
Wash the tomatoes. Set 2 aside. Chop the others.
2.
Beat the egg whites until frothy.
3.
Place tomatoes and egg whites in a pan. Add 60cl of water. Add salt, mix well and bring to the boil.
4.
Lower the heat and simmer for 40 minutes, stirring from time to time.
5.
Wash, dry and remove chervil leaves. Cut the remaining tomatoes into small cubes.
6.
Strain the stock, season to taste and leave in a cool place for 2 hours.
7.
Just before serving, pour consommé into 6 bowls, sprinkle with cubes of tomato, chervil leaves and pepper. Serve chilled.
