4 ripe Plum tomato
2 cloves garlic cloves
1 red Bell pepper (seeds removed, roughly chopped)
1 medium Cucumber (roughly chopped)
1 small onion (roughly chopped)
1 small Jalapeño (or serrano chili)
2 Tbsps torn Basil
½ tsp ground Cumin
Hot Pepper Sauce (to taste)
¼ tsp salt
¼ tsp freshly ground peppers
1 ¼ cups small White bean (rinsed and drained)
2 cups Tomato juice
To garnish
½ cup cooked Green beans (rinsed and drained)
1 cooked potato (diced)
12 thin slices spanish Chorizo
crusty Bread
extra virgin olive oil

Preparation steps

1.
Combine all the ingredients except the beans and tomato juice in a food processor or blender. Process until well blended, but still chunky.
2.
Put into a large bowl. Add the beans and tomato juice and mix well. Cover and chill for at least 30 minutes before serving.
3.
Divide between serving glasses and top with the green beans, diced potato and chorizo slices. Serve with crusty bread and olive oil.
