1 ¼ cups flour

2 Banana (squashed with a fork)
2 Tbsps lemon juice

Preparation steps

1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and grease a loaf tin with butter and sprinkle with ground almonds.

Beat the butter until creamy and alternately stir in the sugar and the eggs. Add a pinch of lemon zest and gradually stir in the baking powder, almonds and flour. Stir in the milk a little at a time until a smooth mixture is formed.

Mix together the bananas and the lemon juice and stir into the cake mixture. Pour the mixture into the prepared baking tin and bake for 45 min until golden brown - test with a wooden stick to see if the cake is done.
4.
Remove from the oven, leave to cool, then remove from the tin and serve sliced.
