Soft Fruit Loaf

Heat the oven to 180°C | 350F | gas 4.
Grease a large oblong cake / loaf tin with 20g butter and then line with grease proof paper.
Peel and mash the bananas together in a bowl making sure there are no large lumps. Mix the flour, salt and nutmeg together.
Rub in the butter with your fingers until the mixture looks like fine breadcrumbs.
Stir in the sugar, lemon juice, eggs and the honey and mix well, then add in the mashed bananas and beat well until it smooth and airy.
Using a spatula scrape the mixture into the lined loaf tin and make sure its distributed evenly.
Bake in the middle of the oven for one hour until risen and golden brown. You can test to see if its cooked by inserting a skewer which will come out clean. If it needs a little longer return to the oven and cook for a further 5-10 minutes.
Leave in the tin to cool a little and then turn out onto a rack to completely cool then serve.
