- ⅞ cup butter (softened)
- ½ cup superfine caster sugar
- ⅔ cup soft dark brown sugar
- 2 eggs (beaten)
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- 1 ⅓ cups self-rising flour
- ½ tsp Baking powder
- 1 pinch salt
- 2 ripe Pear (peeled cored and chopped)

Preparation steps
1.
Preheat the oven to 160°C | 325F | gas 3. Grease and line a 2lb loaf tin.
2.
Beat the butter and sugar together, then whisk in the eggs a little at a time, beating thoroughly after each addition. Stir in the vanilla extract and cinnamon.
3.
Using a metal spoon, fold in the flour, baking powder and salt. Stir in the pears.
4.
Pour into a loaf tin, trying to ensure the pears are evenly distributed and bake for 1 hour or until an inserted skewer comes out clean.
5.
Leave to cool in the tin before turning out onto a wire rack to cool completely.
