Soft Fruit and Choc Loaf

Pre-heat the oven to 180°C | 350F | gas 4. Grease and line a 900 g | 2 lb loaf tin with greaseproof paper.
Mix the flour, baking powder, bicarbonate of soda and salt in a bowl. In another bowl, mix the chocolate chips with 1 tablespoon of the flour mixture.
Cream together the butter and the sugar using an electric hand-held whisk. Beat in the eggs, one at a time, and then pour in the mashed bananas and vanilla extract.
Fold in the flour mixture until you have a smooth batter. Finally, fold in the chocolate chips until they are evenly distributed.
Spoon into the loaf tin and bake for 50-60 minutes until a cake tester inserted into the centre of the cake comes out clean.
Remove from the oven and allow to cool in the tin for a few minutes before turning out onto a wire rack and peeling off the greaseproof paper.
Slice once cool and arrange on a serving plate before serving.
