Semolina with Fruit Skewers
Ingredients
- For the fruit skewers
- 1 small Apple
- ½ Mango
- 4 Strawberries
- 2 Plum
- 1 small Banana
- 2 Tbsps lemon juice
- For the semolina
- 500 milliliters milk
- 3 Tbsps Semolina flour
- 4 Tbsps sugar
- 2 Tbsps butter
- 1 Tbsp powdered sugar
- For the raspberry sauce
- 200 grams Frozen raspberry
- 1 Tbsp powdered sugar
- 2 Tbsps lemon juice
- Additional ingredients
- mint (for garnish)
- powdered sugar (for dusting)
Preparation steps
For the skeweres, peel the apples, remove seeds and slice. Peel the mango and cut the flesh into large pieces. Rinse the strawberries, trim and halve. Halve and core the plums.
Peel the banana and cut into thick slices. Drizzle the fruit with lemon juice and thread alternately onto skewers.
For the semolina, bring the milk and sugar to a boil and add the semolina stirring once. Simmer 1-2 minutes and set aside.
For the raspberry sauce, finely purée the raspberries with the lemon juice and powdered sugar and press through a sieve.
Melt the butter for the skewers in a large pan and saute the skewers briefly, dust with powdered sugar and lightly caramelize.
Spoon the semolina into bowls, top with the raspberry sauce and insert a skewer into each. Serve dusted with powdered sugar and garnished with mint.
