1 ¼ cups Basmati rice
1 garlic clove (finely chopped)
1 tsp honey
1 Lime (juiced)
2 Tbsps olive oil
1 Tbsp sesame oil
4 cups shrimp (chopped)
2 Tomatoes (peeled and finely chopped)
1 carrot (finely chopped)
2 scallions (cut into fine rings)
2 Tbsps Sesame seeds (roasted)
Sea salt
cayenne pepper
Lettuce (to serve)

Preparation steps

1.
Cook the rice according to the directions on the packet and leave to cool.
2.
Mix together the garlic, honey, lime juice and the oils. Season with salt and cayenne pepper and stir in the remaining ingredients and the rice. Season to taste and serve on lettuce leaves.
