Savory Apple and Potato Soup with Bacon

350 grams potatoes
3 sour Apple (such as Boskop)
7 slices Bacon
2 tsps vegetable oil
150 milliliters Apple juice
750 milliliters Vegetable broth
5 pairs sprigs marjoram
salt

Preparation steps

Peel and dice the onions, potatoes and 2 of the apples. Dice three of the bacon slices. Heat the vegetable oil in a large pot and sauté the diced bacon until crisp. Add the diced onions, potatoes and apples and sauté briefly. Stir in the apple juice and vegetable broth, cover and simmer over medium heat for 15-20 minutes.

Peel and core the remaining apple and slice into rings. Cook the remaining bacon slices until crisp, then quickly fry the apple slices in the bacon grease. Drain the bacon and apple slices on paper towels.

Rinse the marjoram, pat dry and remove the leaves. Puree the soup with an immersion blender until smooth and season with salt and pepper. Ladle the soup into bowls, top with bacon and apple slices and garnish with marjoram leaves.
