- For the salad dressing
- 1 garlic clove
- 2 egg yolks
- salt

- 200 milliliters Canola oil
- lemon juice
- Daisy (for garnish)

For the dressing, peel the garlic, squeeze through a press and place in a bowl. Add the egg yolks, season with salt and pepper and stir thoroughly. Whisk in a few drops of oil, then stir in a slow, steady stream. Season with lemon juice to taste. Refrigerate until ready to serve.

Rinse, trim and tear the lettuce into bite-sized pieces. Rinse the scallions, wipe dry, cut the green parts into thin strips and place in cold water. Finely chop the white parts. Rinse, trim and thinly slice the radishes. Peel the avocado, cut in half, remove the pit and cut into wedges. Divide all the salad ingredients evenly into serving bowls and drizzle with the salad dressing. Serve garnished with daisies.
