- 4 Chicken breasts (each about 120 grams)
- Sea salt
- peppers
- 250 grams Oyster mushrooms
- 6 Tbsps olive oil
- 200 grams Lettuce (such as radicchio, Oakleaf, Lollo rossa, arugula)
- 2 Tbsps lemon juice

Preparation steps
1.
Rinse the chicken breasts, pat dry and season with salt and pepper.
2.
Wipe off the mushrooms.
3.
Heat 1 tablespoon oil in a pan and cook the chicken breasts for 4-5 minutes on each side. Heat 1 tablespoon oil in a second pan and saute the mushrooms for about 5 minutes.
4.
Rinse the lettuces and pat dry. Tear lettuces into bite-sized pieces and spread on plates. Sprinkle with 3-4 tablespoons oil and the lemon juice and spread the mushrooms on top.
5.
Cut chicken breasts into slices and arrange on the salad.
